
Edit! Not perfect, but edible. It came out a little better than the last one. I won't skimp on liquids, and I definitely need to consider why my bundt pan is NOT releasing like it should. Other than that, it's lemony, and it's cake.

In my never ending search for the absolutely perfect lemon cake, I made these changes to a standard Box Lemon Cake recipe. I removed 1/3 cup of the water and replaced that with Mikes Hard lemonade, which I added cold and bubbly after the batter was mostly mixed.. I added 1/3 teaspoon of lemon kool-aid. The batter was this marvelous yellow and it tasted like a lemon sherbet. Yes, I lick the spatula (didn't use a spoon or a mixer). If I could stick my face into the bowl I would have, but it would have gotten as stuck as Pooh's honeyjar, I'm sure.
38 minutes from now, 20 mins to cool, 10 mins to ice, 3 mins to slice, 20 seconds to eat. I wanna get that perfect cake! Common Saint Honorius, roll them bones and come up boxcars!
I'm gonna be delivering slices (cause a slice is not considered food) to Sara, manager of PotBelly's tonight.
